Extending USCIS Petition

Whilst in AP (after the interview at the consulate for K1) does one have to call the USCIS or the department of state to extend the petition if its expiring in the next one week, or is something taken care of by the consulate itself which took the interview? Or perhaps extending the petition at this point is not of huge concern as the interview has already taken place?

If you have any questions at this point, you should contact the embassy or consulate directly, however, I do believe at this point that once they accepted the application for visa, as long as it is still being processed, there is no need to renew the petition.

I see, so whilst in processing one doesn't need to do anything about extending the USCIS petition? Thank you.

That's my understanding. The petition just gets you to the interview. Once the immigrant arrives in the US, then the USCIS picks up the case again.
