Yes there is a date on it. If there is no date they means the certificate might not be real.

Where is the date located? Does is specifically say Date of Marriage or just a date under your signature?

This was issued by Vietnam Justice Dept and already accepted by U.S. consulate so I know it's authentic.

Did you have to sign a book when you got the certificate?

Yes, we did.

The date should be on the bottom left hand corner the date is the date you sign the book that is your offical date of marriage

Do you mean where it saids "Vào Sổ đăng ký kết hôn. Số......Quyển số.......Ngày.....tháng, etc....?

So if this date is less than 2 years when we arrive in the U.S., my wife will be receiving a conditional green card good for two years instead of the permanent one good for 10 years?

Yes that is the date of the certificate and yes if you have been married less than two years you will get a conditional GC with you will have to adjust status 90 days of that GC expiration date

Fantabulous. Is adjusting status a difficult process? Do we use form I-751?

You will have to remove conditions, not adjust status, 90 days before the 2 year card expires. Yes it's form I-751

The rest is very very easy compared to things at HCMC. Just remember to keep track of the pieces of evidence that you will need to show your life together. It's just filing paperwork, and paying fees. The hard part is over.
