I don't know if this would apply to just me (u.s. citizen) but if I marry my Mexican fiance in Mexico would the whole process be easier than apply for the fiance visa?

I know that you had posted before about the fact that you were living in Mexico with your fiance and you were worried about the financial aspect because you did not have a job and he supported you. If you are looking into marrying because of that reason-- just to let you know, they require financial information for that visa as well, and the I-864 is much much more involved than what is required for a K1 visa.

If you had been living in Mexico with am FM2 or FM3 and then married your fiance there, you could have filed directly with the consulate, or after August 15, with a USCIS field office. Since you are just there on a tourist visa that won't apply.

The processes for the two visas are somewhat similar, I believe waiting times are about the same.
