I were to drop here and something were to happen with the file and it was "process" and I started everything all over again, what would happen if I ended submitting another form for the exact thing?

If your lawyer cannot provide you proof of mailing the package, proof of the NOA1 and a receipt number from USCIS, and USCIS says you are not found in their system after 2 months now, I do not think you need to worry at all about any duplicate filings going on.

I mailed my request on May 3rd (from the US, fiancee is from Mexico) and got my NOA1 on May 6th. I just got the NOA2 today. If you haven't gotten your NOA1, they haven't received your application. Your package either got lost in the mail or your attorney never sent it. Your attorney is either a fraudster or incompetent. Ask for your money back. If your attorney balks, remind her that you paid for the service of having your application filed, and since that service was never fulfilled, she will have to return your money.
