My fiance left the US in the summer, after school had ended, so how do we know if he overstayed? He said no one gave him any trouble at the airport.

Currently.... they have issued Ice the incorrect GC and we have tried 4 times to fix it. First time they had us send it to the incorrect address. Second time they said we used an expired form, which was the form they gave us. Third time was "oh sorry we lost the last page, can you send it again?." Fourth time is the gov is shut down. Will this ever be corrected in time for Ice to get the permanent GC? Stay tuned to find out. T_T

If he was here on an F1 visa, he had a 60 day grace period after graduation during which he should have left. If he left within that 60 days, then he did not occur any overstay.

If i'm not mistaken, aren't visa expiration dates on the visa itself?

In a way, yes, but the expiration date on the visa only indicates when the visa stops being valid for re-entry - a person can stay in the U.S. on an F1-student visa past the date of their visa expiration and still not overstay. For example, if I had decided to postpone finishing my thesis for one semester, my visa would have expired before I would have graduated - but I would have been issued a new I-20 form indicating I have been given an extension. I could then have stayed in the country studying with my new I-20 and expired visa without any problems. If I had then decided to travel to visit home before my grad school was over, I would have required a new visa through the U.S. embassy in Helsinki to be able to come back as a student.

Hmmm....so do you think he's ok?

He went full time for a year and then he was going through the summer thinking that he would go to school and then last minute, his sponsors weren't able to pay, so he left a month before college started again. I'm just wondering because an overstay would make it bad for our K-1 visa....

Did he finish the program he was issued a visa for? For anyone here to be able to say if he overstayed or not, you would have to know the date when he officially finished school and the date of departure. If he did not finish his program, summer time between semesters was lawful time in the U.S. for him and when he dropped out from school his visa got canceled. If he finished school on, for example, May 31st, he would have an additional 60 days from that to stay in the U.S. If he did not finish his program that the visa and I-20 were originally issued for, whether or not he overstayed or fell out of status would depend on when he notified the program he will no longer return, and then in turn how fast after that he actually left the U.S. Students are not usually required to maintain a full course load during the summer between spring and fall semesters.
