I wouldn't worry about sending your birth certificate overseas. It isn't "original", it is only a notarized copy. The original is in some vault somewhere and you can't even access it.

I sent James an exact copy of the package I sent to the USCIS, although they have the entire package already the one I sent James included originals of some items (such as engagement ring receipt) that I only photocopied for the USCIS. The reason you send these originals to your fiance is because there is a disclaimer somewhere saying that they can ask for originals of evidence at any time, so you need to be sure your fiance has this.
