Re-Entry permit is the way to go.

The re-entry permit is also for LPR students who want to pursue / finish the studies in countries other than USA.

I had done the same thing 11 years ago, completed the Engineering degree and came back to USA on the re-entry permit visa along with LPR card. At that time, re-entry permit was good for 24 months.

When you come back to USA for good, do remember to get the No Objection Certificate from the local police station in Mumbai, where you would be staying. I was being asked for NOC by the Immigration officer at the Mumbai airport.

LPR is a legal permanent resident.

AP will not work for your situation. AP is to allow immigrants to travel while waiting for approval of their green card (so long as they are in status). Once you receive your green card, your AP is invalid.
