I met my Fiance in September of last year and we have about 7-10 pictures from the time we met.

I wasn't able to come and visit my fiance since then, because I don't get vacation from my job until September of this year.

Our interview will be somewhere in July.

Do you think this might be an issue that I've only visited her once? I know that the requirement is to prove that we have met within the last 2 years, but it doesn't specify how often.

Thank you

i think once is okay as long as its within the last 2 years. and the pictures are just to prove you have actually met. for actual proof you need chat logs, phone records, letters, emails and stuff.

As a requirement for the I-129F yep that's fine. The interviewing officer at the consulate might have questions though, on only seeing eachother in person once.

One visit satisfies the minimum requirement but it is just that- the minimum. Poland isn;t that difficult a consulate though, so if you have plenty of other bonafide relationship evidence, you'll probably be ok.
