Here are two example letters I came up with. I think I should submit 4 letters for each of my employers plus a letter from my trade union. I work for 4 different companies but am dispatched through my trade union's hiring hall. I work full time but am not "full time" or "permanent" and any one place. Can folks take a look and tell me if you think this will make sense for the embassy ?

I make over the poverty line but also have some random income (unemployment compensation and some income from work I do on a self-employed basis). I have tax transcripts for the last 3 years and my W2's for all of my employers as well as 1099's for my misc. income.

Can you read this and tell me if it sound good ?

Those are good - I have both one employer for part of my income and the rest is self employment income so I plan on laying it all out on one piece of paper, with attachments so that they can easily get from a to b to c. (which will equal what I am claiming as my current income) Part of this evidence will be check stubs showing year to date income.

I think you should have as an attachment those check stubs that add up at the bottom, maybe the year to date amounts, or the monthly amount you earn - draw the picture of the complete story that they can easily follow. I guess what I'm saying is don't leave any of the math up to them, provide it for them and give them the evidence, of which your letters are a part.
