Hi, with regard to London Embassy, is it a good idea to mail my "documents for readiness" to the Embassy a few days prior to my medical appointment day?

I'd say mail it (DS-2001 + cover letter)just as soon as you're ready (have all your documents in hand.)

If you're willing to sign the statement

I attest that I have all of the documents specified in the Instructions for Visa Applicants and other instructions,

which are applicable in my case, and I am prepared for immigrant visa interview.

on a Department of State form when you don't actually have all the documents, then sure you can send it.
