We had the following translated:

Birth certificate,

Engagement certificate,

Police record,

and all the DS-Forms

Since you guys are so close, i would just make sure everything required in the interview be translated.

hey guys,

just gettin ready for the interview, june 20th.. are there any documents that my fiance would need to get translated into english to take to the interview at the embaassy?

Do you plan to submit any documents/supporting-evidence that are not in the native language of the country the interview is being held in? (Spanish I believe)

Most Embassy/Consulates will not need these things translated. Example; Peruvian police certification (presumably in Spanish) should be fine left untranslated.

Check the Embassy Review Section for any helpful tips as well.

Correct, if the document is in the local language does not need translation, this applies to government issue documents (birth certificates, police certificate). I am talking based on Poland here, the Embassy web site should have details.

You wont need to translate any document to be presented during your fiance interview. The accept all the documents in Spanish, since it's the primary language.
