I would just like to know about how the interviews work for Jordan. We're currently waiting for our K1 approval. My fiance is working in Jordan on a work visa her contract ends at the end of Aug. If she doesn't renew she gets a bonus. If she renews and breaks it or breaks it early she pays. I'm hoping we will get approved in time to just finish and leave when the contract ends. What happens once we get approved? Also how do the interviews work in Jordan is there only certain interview dates? Or if we get approved with a month time left is it possible to schedule the interview whenever we want and get done when her contract ends?

Jordan doesn't let you schedule your own interviews. I would check the timelines on vj and see what is happening now. This will give you a general idea of when to expect and interview. You still can't make any solid plans once the interview is finished...not until the visa is issued. They may or may not put your fiance in AP/AR.
