Photocopies are scanned copies, scanned copies turn in to photocopies not originals. Is that what your asking?

No, I'm asking if the consulate need the original W2, 1040 and paystubs?

The originals of the W2 and 1040 are sent to the IRS, so copies are fine. And yes, I would hope your fiance signed them.

Copies of paystubs are also fine.
