After the AOS and IV packages are sent, in about 2 weeks or so, NVC will review them. If there are no RFEs, then your case will be closed a week or so later. The case will then be put in queue for an interview date to be scheduled. The time between case complete to interview date being scheduled varies. Some people find out a day or two later, some people have to wait a few weeks. Then the time between it being scheduled and the actual interview date is usually a month or two for most consulate/embassies, but can take longer. You'd have to look at timelines for other Mexicans and look at the wait time between case complete and interview date to know for sure how long the wait will be once your case is complete.
