I am going to use a co-sponsor for AOS. My fiancee will soon get a full time job, but not in enough time. Can she take over the sponsorship in a few months, when my co-sponsor wont be needed.

No, once the affidavit of support is approved, then it becomes binding. The only thing you could try is to wait to file AOS until your fiancee gets a job, but that would probably make you overstay and you wouldn't be able to travel or work, etc, which isn't a fun way to live if you can avoid it. No - the sponsorship does not go away if the primary person meets the income level later down the line - the co-sponsor will still be on the hook.

Only if the one of the four conditions for the 864 is met (for it to end) will it go away. (detailed in the 864 instructions)
