I-134 question 7, my fiancee has multiple employers, so is it ok to put in that question see attachment, and then explain her employment details on additional page. Same with income. Although, she doesnt reach the 18000 limit, and I have a co-sponsor.

Also, NOA2 for embassy, will I need it, and would a photocopy suffice?

That will be fine. London won't be looking at much but the co-sponsors info anyway. No point in over-proving and stressing about a document that won't qualify. Someone recently was telling about their interview and said they handed back the inadequate I-134 saying "we won't be needing this", and only keeping the co-sponsors. For London, you don't even have to use the I-134 form. You can write your own as long as it includes all the parameters they require. And Brits can sponsor themselves if they have proof of assets easily turned into cash.

You do NOT need the NOA2 for London. Or the petitioner's birth certificate. Or any photos, love letters, or proof of your relationship.

All you need at the interview is detailed here on their website:
