tax returns for casablanca k-1 interview?

Timeline

Today we received packet 3 for the Casablanca consulate interview for a k-1 visa. A family member agreed to sponsor my fiance (since I'm still a student). As far as I know, the sponsor needs to fill out i-134 and most recent tax returns. My sponsor is concerned about mailing out the W-2 form or any tax returns, for that matter, because she doesn't want to risk mailing out her social security number. She asked me if she could instead provide a letter (i think from her work) that shows her salary and has a online link that the consulate can open to see her income information. She also said that they can call her to verify her SSN and the information on that link. Is this acceptable? If not, what tax return year is required for the interview? Is it possible to cross out her SSN when showing that proof to the consulate?

Timeline

She should call the IRS and request her tax transcripts for the past 3 years. It's free and they're very quick about sending them out. She's going to need to send her birth certificate as well. As for blanking out her SSN, perhaps only black out the last 4 digits- and have an original copy ready to send in case they ask for it.
