Crêpes Marocaines- Msemen

puce.gif 500 kg of flour </SPAN></SPAN></SPAN></SPAN></SPAN></SPAN>

puce.gif 1/2 yeast baker sachet </SPAN></SPAN></SPAN></SPAN></SPAN></SPAN>

puce.gif 100 G of butter </SPAN></SPAN></SPAN></SPAN></SPAN></SPAN>

puce.gif 1 glass </SPAN></SPAN></SPAN></SPAN></SPAN></SPAN>

puce.gif salt with the taste</SPAN></SPAN></SPAN></SPAN></SPAN></SPAN>

Preparation:

In a large pot or a salad bowl, to mix the flour, yeast and salt, to add with tepid water gradually to obtain a flexible paste (will feel it to you by working it between the hands). To knead a few minutes, to coat with a little oil, to cover with a clean towel and to let rest 30 minutes. To take small quantities of pastes and to form small balls of the size of an apricot.

To flatten with the palm of the hand by coating surface with oil to proceed it in the same way with all the small balls. Then to take again the first small ball and to delicately spread out it and gradually. To coat with a little butter and to fold into four, to let rest during this time to make in the same way with the other remaining balls.

To prepare 5 to 6 crepes thus. To heat a frying pan, to spread out the pancakes folded into four and to cook them on the two faces in the dry frying pan. These laminated pancakes can be been useful thus or accompanied by honey and butter.

Wow look at this spread....wow t-image2.JPG

If you have any other food questions, inchallah I can help...

BTW the me'semmem is not like khubz...its a folilated NA style crepe

I tried to make this last week but wasn't sure about what the consistency is supposed to be or how much to knead it so if anyone tries it and it's really good let me know!

Should be balls size of apricots, Knead it as you would any bread dough until comes easily from the sides of the bowl and is slightly wet and sticky to the touch... put a dap of EVO on the dough if it's too dry...flour your board when you roll it out, slghtly pull on the dough (like if you were making elephant ears) spread some butter on the dough then fold, repeat this about 4 times. Sometimes I let them sit for about 5minutes max, nothing really happens...no leavening agent here so it doesn't rise...just coz my hands get tired after all that rolling and folding...but donnot let it sit too long, as it will start to the stick the plate you kept it on...you can fry then. I usually use a plain crepe/frying pan...dry to cook them. But some EVO would add extra tasty flavour. Let me know how it turns out...
