We just got married a couple weeks ago and are now in the process of filling out the I-485 Adjustment of Status. I want my green card to have my new married name on it, but all my previous applications and visa have my maiden name. Can I fill out the I-485 with my new last name?

If you changed your name through marriage then use your married name. That's your legal name.

Yes, you should use your husband's surname when applying for your AOS.

Also, does anyone know where my visa number is located. On the AOS form it asks for the "nonimmigrant visa number" but on my actual visa I can only find a control number and another number in red ink in the bottom right corner.

There's an AOS thread in my signature that has the definitions and links to images to explain this. The visa number is the red number. The AOS thread should also help you with what docs are required etc.
