1) only a few sample emails over the course of relationship, do not send a phone-book, they do not need or want this.

2) Documents like that do not need to be notarized, unless you wish to confirm that you are in fact the person signing the document. If using Affidavits from friends and/or relatives attesting to your relationship, they should have these sworn statements notarized.

I would print out a selection of the emails spanning the time you have been together. Depending on how long you've been together, maybe 2 or 3 short ones per month?

Im not sure what you mean by documents where you made her beneficiary, but if you mean things like life insurance, or health insurance, they dont need to be notarised - just official documentation!

Where is she from (country)? Citizens of some countries are scrutinized more than others and it is wise to send a sample of many forms to prove a relationship. As the others have said, don't send a phonebook...samples are fine. The greatest scrutiny will come at the interview. Good luck and please fill in your timeline so everyone can benefit and assist.
