Would changing the interview date create a red flag?

We requested to have our interview date changed so that I had more time to get my 2010 tax returns together for the I-134 and the embassy replied saying that they would reschedule and send us a new appointment letter in the mail. It doesn't seem like it's a problem but I'm getting paranoid that this request will create some sort of red flag to the embassy.

NOT if you provide a good reason.. say medical etc. If it's just to change it then - they may not honor it in the first place.

Follow-up question: I have 3 years of 1040s including 2010. My taxes were sent electronically by the tax preparer so what I have are original copies. Is my understanding correct that since the originals were submitted, these copies I have are acceptable to produce at the interview? Thanks.

that would be fine. IF you are worried and you have the time contact the IRS and request a tax transcript via fax/email/mail

You dont have to have your 2010 returns for the interview. Copies of what you filed prove you filed. It is not the same as transcripts which prove they acted upon the returns. The idea is to ensure you dont have taxes owed. The embassy may accept your copies. If they dont you will have lost the time it takes to get what is required. You can get the actual transcripts in a few hours to a few weeks depending on how you request them.

Asking for a different interview date doesnt matter to the embassy. You are then subject to their ability to give you a new date.

Contact IRS by phone, in person, or internet. Request transcripts for last 3 years. They are free. If you have fax ask them to fax. If not they will mail. My husbands two about 2 weeks.
