I was reviewing the DOCs that are required for the Immigrant Visa Application in Abu Dhabi

I saw the following on this link: http://abudhabi.usembassy.gov/immigrant_visas.html

The following documents are required to complete processing for any immigrant visa and must be presented to U.S. Embassy consular staff during the interview:

1. The Petitioner's original passport and one (1) photocopy;

Do I need to send my original passport or can I send a copy? I don't feel comfortable sending my passport in case I need it for some an emergency trip, business trip, .. etc.

No, I wouldn't send my passport either. I believe the original is required AT the interview only. If you need to submit it before the interview, always submit a good copy.

It is for her interview. So the beneficiary needs to bring the original passport of the petitioner?

For the I-129f process, you were the petitioner and she was the beneficiary - for the consular stage, doesn't she become the petitioner? Since she is now applying for a visa?

But again on their website they have this:

2. The visa applicant's original passport and two (2) photocopies;

The page you're reading is about Direct Consular Filing. Neither the petitioner's passport OR a photocopy is needed at the beneficiary/visa applicant's visa interview. You may wish to submit a photocopy of your passport as evidence of your trips to visit. If you are actually in town with your passport, she could carry it to the interview with her to show you are there, but NO, do not mail your passport, so she can take it to the interview.

The US Citizen is always the petitioner. The beneficiary is also the visa applicant. This webpage is not the one for the K1 visa interview. The US Citizen's passport is not required at the K1 visa interview.
