I really think this should be in the dictionary of immigration cuz I had the same question long time ago. "Touches" are the actual updates on your case file once you sign up for an account on the USCIS website and add the case receipt number (: for K1 is the WAC43636936 sth numbers we get, for AOs is the MSCXXXXXXXXx numbers we get etc )to your "portfolio". After you first register, its gonna give you the initial update date on your case, like when did they received the application, and you can check periodically if the date from when your file was last reviewed ( it updates automatically, whenever they review your case) had changed.

This DOES NOT mean that your case its approved, its just means that someone touched it, like actually reviewed your case for something.
