What if you don't have any income for the current year?. Say, Petitoner is unemployed at the time of filing I-864. How much assets do you need to make up for that without a co-sponsor?

It takes more than living at the same address to be counted as a "household member" but if a household member you combined need to qualify for three. If she's just a "joint sponsor" she must qualify for two. What is the relationship between you and the sponsor?

Covered in the I-864 instructions, a CRITICAL read for all petitioners. It takes three times the income requirement and must qualify as "liquid" assets. See instructions for what qualifies. This is a somewhat complicated situation, so no easy answers here unless you have PLENTY of liquid assets.

She is my grandmother. But I don't pay her any rent and it's her house not mine. I currently live here with her but normally rent my own apartments but keep her address as my official address, all my mail is here, my work has her address as mine, my school has her address as mine my passport, social security, driver's licences... but for the moment while applying for the cr1 I physically live here. But I'm not her dependent nor do I pay the mortgage.

Then have a look at the I-864 instructions (a critical read for you) and I think you'll find she doesn't qualify as your household member. I don't recall for sure but you can read as well as I can.
