I'm looking for an authentic Egyptian kahk recipe. I would love a recipe that someone has actually made and knows how it turns out. My MIL has given my husband directions on how to make it but the measurements are weird and as you all know baking is a science unlike regular cooking. I would so appreciate a recipe for this traditional Eid cookie. Thanks in advance!

ETA...check out this website for some very authentic Egyptian recipes (no kahk recipe though :() Has a recipe for ghraibah, also very traditional for Eid but Moh doesn't like ghraibah....of course. :rolleyes:

Yes ISNA sets the dates for Ramadan in the US and North America so that there is some standard that is set. If you could see the fiqh desicion as to how the date is calculated trust me you'd be convinced! (It's like almost 100 pages long). But I digress we will start September 13th here, not sure when in Morocco but that's the easiest especially when you're surrounded by a large Muslim community. I was really disapointed that there would be no shpekia this year as last year Youssef's family sent it from Morocco. However we found out that there are several stores in the DC area that are owned by Moroccans and sell it. Now i'm excited!!

It's the last recipe in the sweets section. It says Al Graibah. I've tried these cookies and I love them. Not this particular recipe though.

Moroccan zameta recipe anyone? I've seen zameta/sfouf online, but my husband tells me sfouf is very thin spaghetti covered in sugar (I had it there). Zameta as my husband knows it is a flavored sugar mixture. I've got some in the fridge, but I brought it back in January and I'm not sure I trust it since I'm not sure what's in it. Any ideas? Thank you!

I may have posted this before but its so easy and soooooooo yummy I thought I'd post it again. I made it the other night and the hubster just loved it.

Amals chicken stuff

1lb fresh chicken strips (preferrably fajita size)

green peppers (1)

tomatoes (2)

potatoes (3)

red onions (1/2)

olive oil (to cover bottom of pan

spices gallore

boil chicken for 20 minutes , cut peppers into chunks, dice tomatoes , dice potatoes, cut onion into chunks

cover bottom of pot with olive oil and fry chicken for a few minutes to brown it.

throw in peppers, tomatoes, and onions - let fry together for about 10 minutes

put in casserole dish - mix in diced potatoes and cover with seasonings (i use fajita seasoning, seasoned meat tenderizer, garlic, salt, pepper, poultry seasoning) - cover with aluminum foil and bake at 400 for 30 minutes.

serve with pita bread and fruits. YUM

im curious, why boil teh chicken when you stir fry it then bake it? esp using chicken strips?

This is a long shot but.... anyone know where to get halal meat in Miami? Or MiddleEastern Market? I've been looking for awhile and haven't really found anything

My mom makes something like this quite often. Is it served on white rice? The one my mom makes is with baby artichokes and she trims most of the leaves off to keep only the tender hearts and some leaves and its in a lemony chicken broth with chunks of chicken in it. Does that sound like it?

That sounds like it must be it. We haven't had it with the white rice, but the rest is as you described. The artichoke hearts are left whole and the sauce is lemony with a lot of cilantro, I want to say, though I'm not sure. Do you have a recipe?

I've never made it myself but I will get the recipe from my mom tonight and post it for you. We usually serve it over white rice with vermicelli. I've never had the cilantro in it but that sounds like a great addition. We usually just squeeze extra lemon juice on top. YUM.

Good idea, Rahma!

I usually keep pizza rolls or frozen mini egg rolls in the freezer for a quickie iftar snack for those days when I get home from work a little late. I also keep tamr (dates) handy too.

Kara Do you think there is Konafa and Golash unbaked in DearBorn I wanna buy some and make it my self is it posssible to find it here somewhere and also Molekhiah?
