Thanks MK... sorry it came out so strangely looooooong :lol: I think I am going to try your sambousa recipe...In Algerie we make sambousa too, but they call it bourek here... My aunt showed me how she makes hers and it is slightly different then the traditional way I am used to...

She does not use the pyhllo dough, but a simple dough made from water flour and salt. She rolls this out by hand about a 1-4 incha thick. She makes the filling. She browns ground lamb (or any meat would do), with a half minced onion,ground coriander, cinnamon, black pepper, and salt until browned. Then she added two beaten eggs which she cooks with the meat stirring. When it is cooked she adds fresh parsely. I really like her recipe since it is not greasy... the pyhyllo dough gets too greasy. :D Mmmm I made a potato salad for my husband, cos he likes it alot (esp since it has mayo in it LoL)... and made some deviled eggs. I am going to make a Algerian-French-Hungarian fresh salad with it. Here is what I am going to do...

I made the potato salad (boiled potatoes, chopped boiled eggs, dijon mustard, sweet paprika, minced onion, salt, pepper,mayo, black pepper, lemon juice...simple) Then I made the deviled eggs (or at least my version)

boiled the eggs then scooped out the yolk, mixed with bit of mayo, mustard, black pepper, paprika and fresh parsely. I refilled the eggs, then put a sprig of fresh Italian parsely in the filling, then top of with an olive and sprinkle of paprika for colour.

So to emsemble my hubby's salad I am going to chopped up some lettuce...normally I would use romaine, but here there is bib lettuce only availible. So I chopped that up, or rather chiffonade it into ribbons and place on the platter. A scoop of the potato salad in the middle. The deviled egg on one side. Some grated carrot on the other. Some blanched green beans on the other. Then some boiled beets sliced or grated...and finish off with a few olives... Hmmm it sounds rather werid but my husband loves this salad. I actually do too... it is my version of the Algerian salad with a bit of my own touch :lol: .

Well I will post some mroe recipes when i have more time...I am off to cook now! :thumbs:

does anyone have the recipe for lubia? hassan wants me to make it and all he can tell me is u use a different kind of green bean. they are longer and skinny then a regular green bean.

ive looked this lubia recipe up on the internet and all i came up with is lamb and green bean stew and green beans with rice. neither of these is what he is talking about.

i already make him green beans in olive oil with cilantro and garlic...but its not that either. so i dont have any idea of what he wants.

I found 2 recipes... don't know if either fit the bill, but here goes:

from Casablanca Cuisine:

Loubia- White Kidney Beans w/ Beef & Cumin

prep- 15 min, cooking- 2 hrs

1 lb white kidney beans, soaked overnight

1lb diced shin of beef

1 bulb of garlic

1 T veg. oil

1 T mild paprika

1 T cumin

salt, pepper

Put the beef & kidney beans into a large saucepan together w/ the garlic, oil & paprika. Add enough water to cover the ingredients & simmer for an hour & 1/2, adding a little more water if necessary. Five min before the end of the cooking, season w/ salt & pepper &, just before serving, stir in the cumin.

This is a very simple dish & at the same time a meal in itself. To vary it, you could add 3 or 4 spicy beef sausages, cut in half instead of the beef. This makes it a little hotter.

Loubia - 4 spice Lamb & Bean soup

3 Onions

4 cloves

2 C dried navy beans (soaked & drained)

8 C water

2 bay leaves

5 garlic cloves, minced

1 bone from a leg of lamb of 1 lb lamb bones

2 T olive oil

6 tomatoes (abt 2 lbs) peeled, seeded, and coarsely chopped, or one 14 1/4 oz can diced tomatoes

2 T tomato paste

2 t ground cumin

1 T sweet hungarian paprika

1/8 t cayenne pepper (optional)

1/4 C fresh cilantro leaves

1/3 C fresh flat leaf parsley leaves

1-4 t salt

freshly ground pepper to taste

fresh cilantro leaves, chopped onion & chopped green olives for garnish

Hobz Belboula or pita bread for serving

Stud one of the onions w/ the cloves. In a soup pot, place the beans, water, bay leaves, clove-studded onion, garlic and lamb bone(s). Cover & cook over medium heat until the beans are fairly tender, 1 1/2- 2 hrs. Discard the onion.

Meanwhile, dice the 2 remaining onions. In a skillet over med. heat, heat the olive oil & saute' the onions until tender, 4-5 min. Add them to the beans, along w/ half the tomatoes, tomato paste, cumin, paprika, & cayenne.

In a blender or food processor, puree the remaining tomatoes w/ the cilantro & parsley. Add this mixture to the beans. Cover & cook until the meat is tender & the broth acquires a full-bodied flavor, 1- 1 1/2 hrs. Season w/ salt & pepper. Ladle the soup into individual bowls and garnish w/ cilantro, onion, & olives. Serve w/ warm bread.

clean and trim green beans. simmer lightly in salted water until just tender, about 30-40 minutes. drain and put into serving dish. put remaining ingredients (except almonds) in a saucepan over medium heat and cook for two minutes, stirring constantly. add almonds and stir briefly to coat. pour mixture over the green beans and toss until coated then serve.

*don't use canned beans... gross!*

30-40 minutes for green beans to be "just tender"? I cook mine for like 5 minutes if that. Those are gonna be mush!

that sounds delish, but nothing like the recipes I found for Loubia... I'll have to try them all! I'M HUNGRY... ONLY 3 MORE HRS TO BREAK FAST! :hehe:

30-40 minutes for green beans to be "just tender"? I cook mine for like 5 minutes if that. Those are gonna be mush!

thats how they like 'em!!! at least thats how my husband's family does it... i guess just tender's not the right word... almost mush would be better :lol: you can always simmer to your liking.. or steam (which i like better). when we make this, we put it in a big serving dish and everyone goes at it with pieces of bread.

YUK! I hate how they cook every vegetable to mush here... I keep telling my husband "You like to eat baby food" First time I made sauteed courgettes (zucinni) ...my husband just looked at saying "you didnt cook the courgettes. Why?" Yes, I did... :lol:

Nice spread, Henia. :thumbs: I have cooked Algerian food the last two days. Day before yesterday I cooked beef and egg bourek, chorba, french bread, and salad. Last night I cooked Brochettes, which is beef cut in very small cubes, marinated, and then put on skewers and grilled, chorba, french bread, and flan. mmmmmmmmmm good.
