That's crazy that they asked you for your fiancee's birth certificate! It doesn't say that it's required anywhere on anything. I'm so glad I gave my fiance a copy of mine just on a whim. It seems bizarre that they'd ask for that given that you've already included it in the 129F.

You said they asked only for your W2s and 1040s, but what if you are using official tax transcripts? We're using those, so I'm only giving him corresponding W2s without the 1040s...many people told me they used tax transcripts and were fine.
