Hi guys.

Is it ok to include in the AOS a photocopy of my birth certificate?

and it's better to mail it using fedex rather than snail mail?

Which birth certificate? It's not clear if the petitioner or beneficiary is making this post.

The beneficiary must send in an original or certified copy from the foreign government agency in charge of maintaining the record (i.e., a copy from the foreign government with all the correct government stamps). Copies from a notary public do not meet this requirement.

The petitioner must prove US citizenship or legal presence. A photocopy of a US passport is usually all that is required to prove US citizenship.
