Good morning everyone! I guess everyone's off to a slow start this Monday since there was no thread yet. ;)

This week is going to be a busy one for us. We are moving on Thursday!!! Well, hopefully we'll be starting to bring some stuff over to the new place as early as tonight. I just hate packing so much - I can't wait for it all to be over and to be relaxing in our new spacious one bedroom (relatively speaking of course). Wadi was going to get a friend to help us move, but everyone works during the day - what nerve! :lol:

So expect me to be complaining about my aching back in the Friday thread! :(

Monday... Well it's cloudy. I want to be back at home in my bed! It was a long interesting weekend and now a long week is beginning! We had some friends over last night for dinner. I made couscous w/lamb and a lot of vegetables and a beet salad. It was my first time making couscous by myself. I bought the boxed stuff you put in water just incase I messed up the real thing! Alhumdulila, my couscous came out great! I had to steam in a little longer, but it was ok. It turned out much better than the attempt Carrie and I made to make a Moroccan vegetable soup. We couldn't figure out the bitter after taste and then when we did we ended up burning the soup! Go us! So now our husbands are making fun of us! My husband especially! That big jerk! He wants me to find a recipe for a grilled then fried moroccan chicken, or something like that. I told him if he gets me the recipe I'll make it for him. Anyway, Hopefully today will turn out to be a better day. I hope these clouds go away soon!

Off to the doctor again today. I'm kinda nervous because last week they were wanting to admit me due to slight elevation in blood pressure. I've been monitoring it at home and as long as I'm vegging out, I'm ok. Right now the doctors are pretty sure I will have premiees, but they say the babies are strong and healthy and will be fine.

They hold all the promise of a new glorious week. Looking back on last week, so many good things happened to the MENA family. Meriem and Andrea were reunited with their husbands, Kelly was offered a great job, Donna & Hassan celebrated their wedding anniversary.

More rain and horrible humidity today which means another bad hair day!!! :lol: I'm off to work :crying: but I only have to work 4 days this week! :dance: Khallid and I are starting a short (2 seesions) marriage counceling thingy tonight. The minister normally requires 12 sessions, but is only making us do 2 :D

While looking on-line for Moroccan baked chicken I came across a website with a whole lotta Moroccan dishes! I'm sure if you want to look up other countries you will find a lot as well. This baked moroccan chicken my husband is aking for look a little complicated, but I think it will taste wonderful! Hope everyone is having a good Monday!

A few years back I saw this show on Foodnetwork with this Moroccan guy making lamb with vegetables and couscous. My ex has a Moroccan friend who he invited for dinner one night and I wanted to make something Moroccan. Well it turned out great! Delicious! I omit and add other things to the recipe.

Try it out...it's awesome! I usually subsitute the lamb for chicken. I omit the cabbage, turnips, and rutabaga. I add chickpeas. Since chicken cooks faster you have to shorten the cooking time. I've made it with lamb and chicken..I just prefer chicken.

Hey if anyone is in the market for a good koshary recipe I got one for ya. It tastes just like the koshary I ate in Cairo. Yumm!!!!

Noura, now you're beginning to understand why some of us are getting so nutty. The waiting doesn't get any easier from here unfortunately...

I did finally get a reply from Cairo Embassy (after a week). Just stated his case is pending the mandatory security check with DOS (prints). Well I knew that, but was just freaked that they were blowing me off.
