K-2 visa versus I-30

Timeline

My fiance has four children (and I have one) that we would like to bring to the U.S. On paper, I have enough income to support a family of seven, although in reality he would need to be working before there would be enough money, and also I haven't a big enough place to live at the moment. He knows that and does not want to bring them right away...I know the K-2 visa is good for a year, and that would seem the simplest way to do it....but if we were not ready to bring them over within a year (which I hope we would be), we'd have to do I-30....does this process usually take a long time? It's not good if he is separated from his children for a long time.... not sure what we should do.
