The reason why I dont want to continue to the CR-1 is because I dont want to wait any longer. We have been on administrative process for 11months now. Id rather wait a few more months for the administrative process to be done then go through the NVC for a couple months then wait 5-7 more months to get scheduled an appointment. I know people from Yemen where their cases have been completed since Oct and Nov and they still havent been scheduled an interview at the embassy. Im so confused. I know the CR-1 is better but it's like okay, I'm already done with the process im just waiting on 'visa issued.'

Any thoughts?

Continuing with the CR1 process will cost you only money, not time. You can still take the K3 if it comes through first. If it doesn't, the CR1 will not save you time but WILL save you money and effort AFTER arrival, and if WORKING sooner is in your potential it will mean your husband is earning money several months sooner.

But if my husband comes in with the K3, and we continue our CR-1, wouldnt he have to go back to Yemen to attend his interview? Or if I just apply for AOS after coming in with the K3, he could just stay in the US and have his interview there, correct?

Yes, that's correct. By the time his AP is over, he could have his I-130 on station and skip all that though. He doesn't HAVE to go to Yemen for a CR1 interview. He can still adjust status even if the I-130 gets sent to Yemen.
