which tax return would they go by?

Timeline

I filed form I-129F for my fiancee and my NOA1 was on July 29th of 2010. My tax return for the year 2009 wasn't enough to be a sponsor. However, in 2010 which ends in few days I made almost $35000.

The year is almost over, I didn't receive the NOA2 yet, so obviously we will get it in early 2011, and the interview will be in 2011, too.

My questions are

Will my application be denied because in 2009 didn't make enough money?

If not, and my fiancee goes to interview, which tax return would be go by? The new one for 2010, or the old one of 2009 since this was the one available when I filed?

Will I need a sponsor? I do have one, however, I don't know what form do i need to send him to fill out

They will use the last filed return. You should file your 2010 returns asap and use them.

They will use the last filed return. You should file your 2010 returns asap and use them.

They will evaluate everything you send them, so sending the 2010 tax return does seem like a good idea. Note that the "current income" you state is an annualization of your current pay. That number may or may not match what's on any tax return. So, in addition to any tax return, be sure to include recent pay stubs to document "current income", not just "last year's income".

Facts are cheap...knowing how to use them is precious...
