I agree! I know I haven't been very..."active", but reading your posts is a GREAT pass-time! I just wish I was a "Decemberite" and not a uhhh (?)"Januarian"(?). (Dang it I missed the cutoff by just a few days!)

Also, I have a question about the Police Certificates. Meinard came to the US twice on an H1B visa and worked for about 8 months each time. Is the US now considered a place that he lived?

Hello Mari!

Mostly all moms were a good cook,Pork adobo is one of popular filipino delicacy,it will taste more good if lean pork have some fats on but not too much fats,..are you illocano?i like some ilocano ways of cooking also like dinuguan,lol but i dont wanna eat that food anyway,except if its not made out intestines,lol,yuck..

Does anyone know what to expect for the p2.5, p3 and p4? Hongxia is a little anxious about it and wants to get a head start on things. Any advice would be greatfully welcomed. Also, she is going back to get some things re-notarized because a year has passed since she had it done. Are there any additional notarizations that need to be done? Any help would be great thanks

US police certificates are not required. Our US authorities will check the records themselves, and the USCIS has access to all needed law enforecement datatbases. They will do a query as a part of the process.

If you look on our thread map we have a link there for the NOA2 packet to help the Beneficiary with all the documents, (and it is highly encouraged they also check their Embassy for any 'other' documentation they require specifically for them). Specifically, On the Thread Map we have listed on P.33, post # 490 (NOA2 Docs). Please refer to this list as it is the official list from USCIS.

Okay, after much "fondling" from Mari, here's my recipe from the good 'ole Philippines. I was taking so long because I can't decide on which one I'd like to put in the book, but I finally decided on one and here it is!

It's called the TORTANG TALONG. In other words, eggplant omelette. LOL. It's really good, with or without the ground port/beef. :blush:

This is the classic tortang talong recipe. But look out for the tip at the end of the post. If you like this recipe and would like to be even more adventurous, try my tortang utak ng baboy (pig’s brain frittata). No, it’s not one for the Fear Factor. There’s nothing disgusting about the way it looks or smells. Just great food.

Ingredients :

250 g. of ground lean pork

1 tbsp. of finely minced garlic

1/2 c. of finely chopped onions

3/4 c. of coarsely chopped tomatoes

1 bell pepper, finely chopped

4 eggs, beaten

1 tbsp. of flour

4-5 talong (eggplants)

salt and pepper

cooking oil

Cooking procedure :

Mix together all the ingredients except the eggplants and the cooking oil.

Cook the eggplants (boil, steam, grill or broil) until soft but not mushy. Peel off the skins, leaving the stems intact. Using a fork, flatten the meat of the eggplants. Divide the pork mixture into as many eggplants you prepared. Place the mixture on the flattened eggplants, patting the meat to make sure it is compact.

Heat a skillet or wok. Add about 2 tbsp. of cooking oil and heat until smoking. Carefully slide one stuffed eggplant onto the hot oil. Cook over medium-high heat, about 5-7 minutes on each side or until golden brown. Add more cooking oil as you cook a new eggplant.

Serve with catsup.

If you want a really special tortang talong, lay a slice of cheese on the flattened eggplant before adding the pork mixture on top.

Don't forget steaming white rice and a glass of Coke with some "sabaw" of sinigang and nilaga. Eff the carbs!!!

I thought I'd give you my English recipe now for a good old fashioned English cream tea and scones!

for 8 - 10 scones:

225g/8oz self raising flour

55g/2oz butter

25g/1oz caster sugar

150ml/5fl oz milk

1 beaten egg

teeny bit of salt

i PERSONALLY love to add a load of sultanas as well or any dried fruit! yum

pregrease your baking sheets!

preheat oven to gas mark 7 (220c). mix flour and pinch of salt and rub in butter, stir in sugar and milk and make it all doughy.

pop the dough onto a floured surface and lightly knead it, you want the dough about an inch thick, use a cutter (depending how big you want them, 5+ cm) and stamp out the little discs of dough, and pop those on your buttery baking sheets, keep kneading the dough and stamping out until it's gone.

brush the tops of the little will-be scones with a beaten egg and bake for 10-15 minutes until they're yummy golden and risen.

then you can put all the fattening stuff in the middle!! i love using clotted cream, or thick butter, and then lots of strawberry jam (jelly!) personally.

as for tea, i use the cheaters way with an electric kettle and teabags. best teabags to use i find are PG tips or Yorkshire tea, i've seen both in supermarkets in VA (either Walmart or Wegmans) in the Great Britain aisle. failing that, the plain old Lipton ones are quite good. just no english breakfast tea or earl grey if you're adding milk.

about 250ml of water per serving (and per teabag, or 2 teabags per 250ml depending how strong you like it), bring to the boil in a saucepan (just heavens not in a microwave it's just not the same!).

if you have a pretty teapot then pop the teabags in there first and add the apt amount of water and brew the teabags in that, otherwise very carefully (over the sink, i have shouted profanities in Reilly's moms kitchen on several occassions for painy or messy reasons) pour the water straight on to a teabag in a mug or cup.

i then add two artificial sweeteners personally, or two sugars if needs must, and then a dash of skimmed milk and stir. many people differ with me on that one though and go for full fat milk in a hot tea but it makes a shiny little layer on the surface which puts me RIGHT off!
