I was wondering why you changed the date also. So if you reschedule then you will have a civil ceremony to satisfy the visa requirements and then have the larger ceremony in May? My wedding date is scheduled for 11-12-11. I haven't even thought about rescheduling the date yet. I'm just crossing my fingers as well because now my fiance will apply for his visa in his home country (Guyana) and not Barbados. I have no idea how long the wait is for the interview. I figure if he has an interview no later than August or Sept, we should be good to go. Let's just all hope that happens

Good luck to you!

Yes, we will have a civil ceremony to satisfy the visa requirements and then we will have our big ceremony in May. Things are sort of up in the air right now because I am also waiting on some other (unrelated to visa) information that is going to make a difference in when and how we do things. Life is chaos right now! I just didn't want to take a chance on the wedding since my consulate is so slow and I don't know how things are going to go with my petition at USCIS. I have terrible luck, so I just know something would have gone wrong!

Good luck to you and I really hope you get everything taken care of in time so you can have your wedding as planned.

Right now we are trying to change the date, but our venue wants to keep our (LARGE) deposit and not let us use it on the new date. I'm very frustrated since she knows the situation, and it will be very hard for us to afford to lose that money. My step-dad is giving the venue a call today to try and sort it out so cross your fingers for us!

Dear Decemberite Family!

I have requested that our Thread be Pinned from Captain Ewok, VJ Administrator! I am in hopes he/ she will consider us worthy for such. Here is the email I sent Captain E.

Hi Captain!

I would like to submit to you and request please, if you would, the PInning of the December 2010 K1 Filer's Thread? Here is the link: http://www.visajourney.com/forums/topic/287508-december-filers/page__st__1005

We are a very welcoming group with friendly couples who are very interactive with one another daily! To date, instead of complaining about the "wait time of uscis" we are having a blast!

Together, we are working on the NOA2 document requirements, we are sharing wedding planning tips (we have a post just for wedding links), we have a Decemberite Fitness Challenge for both Brides and Grooms, and our new project is our very own Decemberite 2010 K1 International Cookbook!

We are all very proud of our thread and it helps us support one another through thick and thin. We have a very positive outlook and would like to move through this Visa Journey each step of the way, together.

Dizzylox has been fantastic with her expertise on Excel and creating a Timeline just for us and I have organized a Thread Map so our "Decemberites" (newbies or visitors too) can navigate around.

I'd really love it and I think its safe to say, "we" would really love it if our Thread could be considered and qualify for Pinned.

Thank you in advance for your attention for this request.

Sincerely,

Mari

It's better to take a simple white vinegar ;)

From Singapore: Hainanese chicken rice

(Please note that it is a Singaporean dish, and not a Hainan dish, and apparently, there is no Hainanese chicken rice on Hainan island/or it taste really different)

You can find it at any Hawker Centre in Singapore, and the rice is extremely fragrant, with sesame oil, and key is having awesome chilli sauce.

Taken from Asian recipes

For the Chicken

2 kg whole chicken

1 inch bruised ginger

2 cloves crushed garlic

2 tablespoons sesame oil

1 teaspoon light soy sauce or to taste

For the Rice

4 cups long grain rice

3 cloves sliced garlic

1 inch sliced ginger

1 tablespoon cooking oil

5~6 cups chicken stock

Salt to taste

2 teaspoon sesame oil

For Chili sauce

6 fresh red chilies, seed removed

1 clove garlic

1 inch ginger

Salt to taste

2 teaspoons sugar

1 teaspoon vinegar

2 teaspoons chicken stock

Using a big pot, bring the water to the boil. Add the chicken, ginger and garlic into the boiling water. Do not cover the pot. Boil for about 2~3 minutes before turning off the heat and cover for approximately 15~20 minutes for it to cool. Repeat the boiling and cooling process the second time. Use a fork or chopstick to test the doness of the chicken. Once properly cooked, take the chicken out and place it in a bowl. Pour cool boiled water over the chicken to stop the cooking eventhough it has been removed from the heat. Mix the soy sauce and sesame oil in a small bowl. Brush the mixture on the chicken. Find a well ventilated spot and hang the chicken. Keep enough of the chicken stock for te rice and chili sauce to be used later.

The remainder chicken stock can be reboiled for another 10 minutes with the cut pieces of the chicken legs and wings. Season the chicken stock with 2 cups of the vegetables of your preference. Continue to simmer until cooked. Add salt and pepper to seaon. Add the scallions. Keep the stock warm

Preparing Rice

Wash and drain the long grain rice. Heat the oil in the rice cooker and saute the garlic and ginger until fragrant. Add the well drained rice and fry for another 3 minutes. Add the chicken stock, salt and sesame oil. Cook until all the liquid has been absorbed without closing the cover. Then cover the pot tightly and reduce the heat until it is cooked.

Preparing Chili sauce

Mix all ingredients in a food processor and blend. Add in the chicken stock and place in a sauce bowl.

Question about NOA2:

Hi all, I've been reading mixed reviews, for the NOA2, do we need DS-156 (2 copies) and DS-156K (1 copy) or only DS-156?

On the fitness challenge, I've been cutting down on sugars (all my teas have no sugar), eating 80% more vegetables, including brown rice and less red meat. I am aiming to lose 4kg by Nov, by ceremonial wedding. I do hot yoga twice a week and will be doing a 1/2marathon in May, which means..i need to start training..im just so so lazy!

I've been watching "My big fat diet" on youtube for inspiration as well.
