Wife's Age is 1 year off on Marriage Certificate. What Now?

Marriage certificate says 27 but she was 28 at time of marriage. I assume this could be a major problem or does USCIS look at birth certificate and passport for verifying and cross checking personal stats.

How would I remedy this if this is a potential Visa killer?

correction of error in documents depends on country specific instruction. i do not know in your country. but here in the philippines, if marriage licensed got an error, all u need to do is go to the civil registrar and have it corrected. then youre good to go.

I agree, I would give them a call and see what they say. Our marriage license had my maiden name misspelled, we had to go get it corrected for a few dollars.
