Tax transcripts with I-134 for interview

Since I was recently a student I do not have tax transcripts for the past two years. I do have a job (since October) making well above the federal poverty guidelines, letter from employer, and banking information. As stated in the K-1 guide:

You will likely need at a minimum (for the above form) two to three of your most recent pay stubs and a signed letter from your employer listing you job title, start date, your salary, and the status (full-time) of your position. Begin collecting these ASAP after your NOA2 arrives. You will also probably want to include other evidence such as your banking information and other assets as required by the I-134. Specifically you will need at least 2 of the 4 options mentioned in Section II-Supporting Evidence of the I-134. See this FAQ for more tips and ueful information on the Affidavit of Support Form.

All of this I can do, and it does not even mention tax transcripts, but sometimes when I read on the forums the COs ask for transcripts. Why do they ask for these? Specifically, is this an issue for Juarez?

i also have a similar question about the tax transcript do i need to get notarized those papers?

The Juarez consulate website never even mentions tax transcripts. It seems like they just want to confirm you have employment.

Actually even if I do not these tax transcripts it should not matter right? According to the I864 I would simply write an explanation (which I have- I was in school and did not need to file). Since the I134 follows the I864 this should work right?
