I've got a question. We are now at the point we are preparing our final packet for the interview in Guayaquil Ecuador. For the financial support information you have to submit your most recent 1-3 tax returns. I currently make well over the minimum required for the k1 visa. However, the past three years I was in college and graduate school. Only my past three months of paystubs reflect my new wages. Will those paystubs and the letter from my employer be sufficient evidence? Or because my recent tax returns and three months of paystubs preceding the most recent paystubs reflect a lower number, am I in trouble? My parents would be co-sponsors if I asked, so should I do that for good measure, or am I secure because I do, in fact, make plenty of money?

You should be fine. The pay stubs and letter from your employer + bank statements.

Any reasonable person would realize that you just finished school and are now working.

You got by USCIS already. Were you not in school at that point? What financial evidence did you supply with the I-129F?

If you have a letter from your employers stating how much money you make a year, I guess you'd be covered. The letter should then reflect your new salary that puts you above the poverty guideline.

As for the supporting documents that you really need, it's always a good idea to check with the consulate/embassy. For example, in Brazil, even if the petitioner is not self-employed, we're instructed to bring the latest tax return.

Also, if you feel more comfortable, you can ask your parents to be co-sponsor. I-134 is not legally binding anyway and you'd be totally safe in the I-134 front.
