Bank letter and pay stubs for KI visa proof of income

Hello to all, Has anyone have an idea regarding the K1 visa proof of income, i would like to ask if a bank letter stating the present balance and when the account was opened and 3 recent pay stubs that shows above poverty guideline with employers letter will be enough to bring as proof of income in my interview,since my fiance last years income is short of about 3000 last year.

And he just got have a new job this november and my interview will be on january. Thank you so much .please anyone who has idea help me .May the good LORD bless us all.
