06-11-2007 = NOA1 date (unknown to me).

07-20-2007 = Phoned Immigration Officer; got WAC#; where's NOA1?

09-25-2007 = Touch (first-ever).

09-28-2007 = NOA1, 23 days after their 45-day promise to send it (grrrr).

10-20 & 11-14-2007 = Phoned ImmOffs; "still pending."

12-11-2007 = 180 days; file is "between workstations, may be early Jan."; touches 12/11 & 12/12.

12-18-2007 = Call; file is with Division 9 ofcr. (bckgrnd check); e-prompt to shake it; touch.

12-19-2007 = NOA2 by e-mail & web, dated 12-18-07 (187 days; 201 per VJ); in mail 12/24/07.

01-09-2008 = File from USCIS to NVC, 1-4-08; NVC creates file, 1/15/08; to consulate 1/16/08.

01-23-2008 = Consulate gets file; outdated Packet 4 mailed to fiancee 1/27/08; rec'd 3/3/08.

04-29-2008 = Fiancee's 4-min. consular interview, 8:30 a.m.; much evidence brought but not allowed to be presented (consul: "More proof! Second interview! Bring your fiance!").

05-05-2008 = Infuriating $12 call to non-English-speaking consulate appointment-setter.

05-06-2008 = Better $12 call to English-speaker; "joint" interview date 6/30/08 (my selection).

06-30-2008 = Stokes Interrogations w/Ecuadorian (not USC); "wait 2 weeks; we'll mail her."

07-2008 = Daily calls to DOS: "currently processing"; 8/05 = Phoned consulate, got Section Chief; wrote him.

08-07-08 = E-mail from consulate, promising to issue visa "as soon as we get her passport" (on 8/12, per DHL).

08-27-08 = Phoned consulate (they "couldn't find" our file); visa DHL'd 8/28; in hand 9/1; through POE on 10/9 with NO hassles(!).

We always have thanksgiving at my SIL's and ever year I have slowly taken over...the first year they made instant mashed potatoes and stove top stuffing so the next year I volunteered to do the mashed potatoes and last year I did one of the turkeys plus I made a corn bread stuffing.. SIL made her stove top stuffing but mine got eaten and hers barely got touched.. :whistle:

this year I told her I would come early and we would make stuffing from scratch...lol

we are going to do a corn bread stuffing that you do in the crock pot and a regular stuffing that we are going to stuff one of the birds with and the rest we will make into stuffing muffins... the other bird I stuff with some aromatics, apple, cinnamon and some fresh rosemary and sage..

then we will have mashed potatoes and gravy and some kind of vegetable...

for dessert someone usually brings some store bought pumpkin pies and I make my chocolate trifle.. this year I am going to make some pumpkin spice cupcakes with a brown sugar cream cheese frosting too...

Instant mash and stove top will not make it into my dinner either! Your sil is lucky to have you around to help her. Putting apple in the turkey sounds interesting.

I just sent out an email to my family to tell them Im taking requests for thanksgiving side dishes. Hopefully I will get some replies then I can make what everyone else wants instead of deciding on my own.

i got the apple idea from alton Brown.. you microwave the apple, cinnamon and onion in some water before putting it in the turkey

i have brined the turkey before and it came out yummy but last year I didn't brine it but just stuffed it with the aromatics and the sage and rosemary.. I even put some rosemary and sage under the skin.. and baked it in one of those roasting bags and it came out perfect..

i'm doing all the cooking as i have since i was 19...our menu is pretty standard chinese/american fusion blend although mostly american!

turkey

bread stuffing (nothing weird in it like chestnuts or oysters BLECH)

garlic/chive mashed potatoes

fresh string beans with basil and lemon sauce

my mom makes an amazing cranberry jello with fresh cranberries, fuji apple and pineapple in it. (i do still like can shaped cran sauce too though)

fresh baked sweet rolls

desert

pumpkin pie cheesecake

creme brulee (most fun of the whole meal is me and my torch)

mmmmmm hungry now!

Yum! Crème brûlée!

I like roast leg of lamb, so we will have that along with turkey and all the traditional stuff.

Mmmmmm.... laaaamb.

I was also considering a pumpkin cheesecake with either a cranberry compote or a candied pecan type topping or putting pecans in the crust.

Pecan crust sounds yummy.

It's become somewhat of a tradition for me to make my Moroccan-style samosas as an hors d'oevres. And that's it - I get off easy.

Mmmmmm, samosas. Do you have your recipe handy?

We are going to the inlaws and I will starve to death like usual. Southern style cooking is not something I have been able to get used to. I put little bits on my plate and then push it around so it looks like I'm eating so that I don't offend anyone. I am hoping my SIL will make her mac and cheese like she did one year. It was the only thing I could eat. :(
