Petioner to change job during AOS

I came to the US two weeks ago on a K1 and got married to my US fiancee last week. So we would now be approaching the step where we file for adjustment of status. Problem is, my wife will change jobs in about a month. I wonder if this can create problems because we planned to submit the letter of her employer with the affidavit of support. Since her 2009 income was mainly based on unemployment benefits, we feel it it necessary to show she currently owns her own money. Both now and at her new job she will be making 60+K, so the poverty level is no problem.

I do wonder however what happens with the affidavit of support if her job changes. Is it still valid as is, do we have to file something again, supplying a letter from her new employer? And how and at what stage do they check this anyway? My impression from the K1 process, where i had to provide a different affidavit of support was that nothing was really checked (as in calling the employer). They barely had a look at the provided documentation at the consulate.

If absolutely necessary, we could wait another month until she is established at her new job, and get a letter from them, but I would like to avoid that, I want to get back to work.

Any hints or ideas?

If she is taking a new job with approximately the same salary as the old one, she should just ask the new employer to provide a written employment offer with the salary and the title of the HR person or hiring authority. It should also state her start date ,

I agree with the advice of the above person. When we were doing AOS I was changing jobs. I just sent the offer letter with the start date and my signature on the offer letter. So far no RFEs or issues and our case was transferred to CSC.
