If you do qualify on income and have recent paystubs to document current income then the bank letter isn't needed. The format of the letter is correct.

Also, if your checking account balance is like mine (not that huge), then it won't be all that big a difference. Though it cannot hurt.

Actually no. For a K1 visa you need a bank letter and letter from employer, those are the requirements as per the form instructions for the I-134. Tax returns aren't required (for the form that is, some consulates require them - like the Philippines), neither are paystubs. I think you thought this was for AOS when it's not...
