Hello again!

My fiance and I are going through the K-1 paperwork and I wondered how best to describe my mother's birth place. She was born in Salisbury, Southern Rhodesia in 1950 (which became Harare, Zimbabwe in 1982) - which is correct for the form?

I would put whatever is on her birth certificate.

Agreed, I would put whatever is on your mom's birth certificate. If you want to include a separate sheet of paper explaining the name change of her birthplace, that would be good too. (or I would put a post-it on her birth certificate to explain it there, to save you a sheet of paper)

05-10-2018: Citizenship Interview - Passed English and Civics Tests, Recommended for Approval! :D 

06-19-2018: Received email and text notification: Naturalization Ceremony Scheduled; waited for letter to be uploaded on online account - it has been set on Wednesday, July 25, 3:00 p.m.

07-25-2018: I am now a U.S. Citizen!

Timeline

Agree with putting what is on her birth certificate. Lets assume for instance I was born in some place that no longer exists (lets say, Atlantis). Regardless of whether it exists now I was born there. I wasn't born in the Ocean (which is where Atlantis would be 'cause apparently it sunk right?).

Make sense?
