I am hopefully just a few days from getting NOA2 but am confused about the next step. When I was preparing the original I129F package I made two complete photocopies after I was done compiling. This included copies of signatures also. I have extra photos that I am using instead of copies of photos but from what I am reading my docs need original signatures? Everything except the photos are copies. Do I need to redo?

No just send your fiance(e) the copy of the 129F submittal....plus any new documents as described in the Guides and/or what your country's particular Embassy tells you to send.
