I think I've read enough to know, but I'm still not sure. Sorry if this is a stupid question.

As Petitioner, now that both the I-130 and 129F have been approved, Will I get any notification or mail from NVC

advising of the Status of the petitions or the transfer to the Consulate?

I think the next paper we get is the P3 to my wife from the Consulate. Is this right?

Also, I see where people make calls to check status. Who do they call ? DOS?

Is this the same as calling NVC at the number as listed on the NOA2?

If not, what is the DOS number.?

Yes NVC will send notification of transfer to Consulate. Yes you will get P3 from the Consulate for the K-3.

Also, I see where people make calls to check status. Who do they call ? DOS?

NVC (603) 334-0700 Listen to the instructions. You will need to speak to an operator as those applying for K visas can not hear any updates using the automated messages.
