Informal vs Formal Engagement dilemna

Timeline

So I met my fiancé in December and decided to have a western engagement (you know, where the guy propose and the girl accepts it) and of course, both side of the family accepted each other. I traveled back to India and three days before the interview, we had a formal engagement. At the interview, we did receive a 221g for additional proof of relationship. We took engagement album but CO didn't look at it nor heard that we had a formal engagement. Now I am worried that if we submit the engagement album along with hotel and restaurant receipts, the CO might doubt even further.

In our culture, we have an engagement once the wedding date is set so I can try to explain this in the letter but still, I am worried. Any thoughts?
