Yes, she can make an infopass and they can grant the permission to leave on the spot. If she's concerned about leaving, when she gets here I would get married ASAP and have all the AOS paperwork ready to go for her to sign and then send it off straight away.

Assuming you get married right away, yes.

AND file the I-485/I-131.... getting married alone without the I-485 is of no help for traveling

If her grandmother passes away, or if there is any other type of family emergency, she can quickly get an emergency advanced parole and go to Russia (and return here!). Just make an Infopass appointment with your local USCIS office and explain the situation to them. I'm not sure though whether any proof such as a death certificate would be needed. I'm pretty sure they'll want to see some document proving the grandmother's death if not then their office will be flooded with people claiming Grandma is dead.

For us K-1ers, I'm not sure if you have to be married already in order to get an emergency advance parole. USCIS will be able to answer that question.

You absolutely have to be married before you can file for AP during AOS. The k-1 visa gets you here and you are supposed to be married within 90 days. The AP is granted so you can travel while they work on your adjustment after marriage but if you are not married and do not have a pending AOS, what basis will you be applying the AP?
