You should not need a SSN, I didn't need one, and neither did our baby who was born here (and it took 3 months to be sent her SSN), they accepted both of us penguin SSNs. All you need is proof she is here legally, ie photocopy of visa in passport, greencard or some such.

If you have health insurance through your employer, you should be able to ad your wife with effective date the day she gets here. If not, look into short term health insurance such as Blue Cross Blue Shield.

Me: Irish/ Swiss citizen, and now naturalised US citizen. Husband: USC; twin babies born Feb 08 in Ireland and a daughter in Feb 2010 in Arkansas who are all joint Irish/ USC. Did DCF (IR1) in 6 weeks via the Dublin, Ireland embassy and now living in Arkansas.
