Wonderful,

There really isn't anything to making koshary. You just cook the rice, pasta (elbow or any other smallish pasta) and brown lentils seperately; fry thinly sliced onions until golden brown and drain on paper towels; the sauce is: sauteed garlic, tomato puree or crushed tomatoes, cumin, salt, pepper, chipotle sauce or whole chipotle (add a little at a time to test spiciness) and a bit of vinegar at the end. The amount of spice depends on your taste but for a large can of tomatoes I probably use a teaspoon or so of cumin. When everything is finished simply layer with the onions on top. My husband tells me I make koshary just like an Egyptian. :) Not to toot my own horn but I agree with him. lol.

I usually add chickpeas to my onions when they are about 1/2 done also. for the tomato sauce I just use garlic, red pepper flakes, chili powder, cumin, a tbsp of white vinegar and a can of tomato sauce. very easy - but damn! its a LOT of pots & pans!! :P

ETA: did a little digging to find Moody's koshari recipe - this is the one I always use although I cut back on the steps a bit:

She hasn't been around much but here it is:

No koshari without the hot sauce:

>

>1 large can of whole peeled or crushed tomatoes

>2 Tablespoons hot chili paste (Mexican chipotle in adobo sauce) (or

more if

>you can take it)

>1/4 cup of oil

>8 cloves of garlic sliced (or more)

>3 Tablespoons vinegar

>1 Tablepoon of ground cumin

>Salt pepper to taste

>

>Fry the sliced garlic in oil until they start changing color.

>Add the can of tomatoes and the chili paste, salt and pepper.

>Bring to a gentle boil, turn the heat down to low.

>Add the cumin and the vinegar, leave it simmering for 15 minutes.

>Put it all in the blender to make a smooth mix.

>At this point you can still adjust the ingredients to suit your own

taste,

>in particular the garlic, chili and vinegar.

>

>

>No koshari without the garnish of crispy carmelized onions

>

>3 large onions sliced into rings.

>Put some oil in a large pan add one tablespoon of butter for added

taste.

>Sautee the onions rings until they turn deep deep brown (just short of

>charred).

>Make sure that the onion rings do not overlap each other so that they

can

>crisp nicely.

>If your pan is too small do it in batches.

>No part of the onions should be even lightly brown.

>Stir to keep them from burning.

>This may take 20 minutes or more.

>You must taste something that reminds you of candy rather than onions.

>

>Drain on a paper towel and keep others from taking samples.

>In my experience that is the one ingredient that runs out the first.

>It should be somewhat crispy not soggy and limp.

>

>Now the main recipe

>

>2 cups basmati rice washed

>2 cups brown lentils washed

>2 1/2 tablespoons butter

>1/2 cup vermicelli pasta

>1 small can of chick peas, drained (optional)

>1/2 cup cooked elbow macaroni (optional)

>

>Fry the vermicelli in the butter, when golden brown add the rice and

stir

>till all grains are coated.

>Add 3 cups of water bring to a boil, cover and simmer on lowest

possible

>setting.

>Add 1 1/2 cups of water to the lentils and cover and cook (really it

is a

>steaming method) on lowest setting until tender (but not until they

burst)

>in the last 10 minutes of cooking add the chickpeas if any.

>When the lentils are done drain any remaining liquid.

Ok I'm officially freaked the F*&^% out right now. I was just posting thanks for posting the koshary recipes because I was thinking I needed to make some for dh soon after we had the dinner party last night. Then I started posting about the latest haunting experience this morning that happened a little bit ago about the manual bicycle light whirring in the kitchen & then the entire houses power shut down for a minute and came back on.

I think it's too creepy of a coicedence that the manual bicycle light would be whirring in the kitchen just minutes before the houses power shut down. Now I want to GET OUT OF HERE! Hubby had to calm me down.:help:

I'm like Staashi, get someone to pray over that house...i wanna move too, but i have to stand my ground... if it gets really bad like it did for one of the pastors at my church to where he would have cuts and scratches on his body, i think i would move.. he moved from texas to alabama to be closer to his wife's family, not because of entities.. but i would definitely try prayer first...i am here for you... i believe you, trust me i do (F)

First time I made koshary, I used google and found an online recipe... it said use basically all the same ingredients yall have mentioned but it also said to use a spoon of sugar... so I did and it tasted horrible! 2nd attempt was better but I found out I dont like cumin at all. And yes, too many pots and pans and I already hate washing dishes!

Call a priest like NOW!!!! Just sayin'.

I hear ya Staashi. I've never called a Priest before for anything so I don't know how that works but also it's not my house & I don't know how the family would feel about me doing that.

One thing I haven't mentioned yet is that house is a block and a half from one of the oldest cemeteries in Boise. They are still using it today to bury people. It's the original old farm house that some of the first people that settled in Boise built and farmed the land around it before it became developed. I guess it sat vacant and renovated for a long time until this couple purchased it. They used to buy up properties like old homes like these and renovate them to for resale. Since the market crashed they've been stuck in this house and a few other properties that they have to rent out to tenants.

I asked hubby last night if one of the spirits from the cemetery maybe found this old house and stayed in it for awhile. He mentioned that maybe it was a jinn living in the house. I laughed but he was serious of course.

Last night I got so spooked. I was laying down to sleep in the parents room while dh was downstairs studying again. This time I left all the lights on upstairs in all the rooms and the closet doors open hoping for no activity since I can see in there when I walk by. As I was beginning to drift off to sleep I heard the floor creek and then I heard footsteps coming into the bedroom. My nerves jumped and I shot out of bed and headed for the old stairs. I opened the door to go down them and I felt something poke in my lower back of my left side. I yelped and bolted down the stairs and told dh that I was sleeping on the couch tonight and what happened. I think I scared him so bad because I was so frightened and had come screaming down the stairs. He slept on a mat on the floor by me because I wouldn't sleep upstairs and he wanted to be near me. I could still feel where what ever poked me in the side afterwards like a residual feeling and it gave me chills till I fell asleep. I don't know why but I feel safer downstairs then upstairs and I have no intention of going back upstairs except for showers and checking on the hamsters.
