Since moving here, getting married, and getting my conditional residency I have managed to lose my passport. Now, Im not really planning on any overseas vacations for a year or two so am not in a big rush to get a new British passport and spend $$$$ doing so- but is it necessary to have it when removing conditions? Or do they just give you a new greencard? Ive been reading about the stamp they put in your passport- is this always the case?

You don't need the passport to file for ROC (removal of conditions). Not everyone gets the I-551 stamp in their passport - most don't (from what I've read) so in this regard, you don't need to worry about it. They'll issue a new PR/Green Card.

That said - you should have your passport replaced - not just for international travel.

Have you reported your passport stolen/missing? That should be the first thing to do. You don't want it ending up in the wrong hands and you ending up on the FBI watch list. There are crazy people out there.

Now to answer your question, passports do not play any role during ROC and since you don't plan on travelling anytime soon, you don't have to worry about getting the stamp.
