I recently had my interview (May 17th) for my AOS and got approved. I informed the person who interviewed me that I would be needing to travel back to Canada for my religious wedding , but he said that the green card would arrive before I leave. At the interview, he asked to give him both my EAD & AP (which I gave) and said that I would be receiving my green card shortly. It's been a few weeks & the green card still hasn't arrived. I'll be leaving on my trip soon to go back to Canada (in less than a week). I booked an InfoPass appointment in a few days and was wondering if at the appointment itself, would they give me a stamp (I-551) and what should I bring to the appointment?

It seems that every office does things differently. I actually received the I551 stamp at my AOS interview. So, you should be able to get it if you make an infopass appointment. I'm not sure what you would bring. If it was me, I'd just bring my whole darn file that I brought to the interview because you never know. And, of course, you know once you go through all this hassle, the next day your green card will show up in your mailbox!
